Pie Oh My!
It started with a can of sweetened condensed milk, and my wanting to create something to enjoy in the moment, yet perfect for any upcoming holiday sweet ideas. And – voila! Pie Surprise!
Vanilla Custard Pie Surprise
The surprise is in the jam at the bottom of this delicious pie.
1 9-inch frozen pastry shell, defrosted
1 can sweetened condensed milk
1/2 cup 18% cream
1 cup hot water
1/2 tsp. Salt
1 tsp. pure vanilla
3 eggs
Cherry jam
Grated nutmeg
Preheat oven to 425F. Spread cherry or raspberry jam on bottom of pie crust. Set aside.
With a hand mixer or whisk, combine milk, cream, hot water, salt and vanilla and beat until well blended.
Whisk eggs together, then carefully whisk into custard mixture, moving quickly so eggs do not scramble.
Pour egg mixture into pie shell, sprinkle with grated nutmeg and place on a baking sheet. Carefully set in centre of oven and bake for 10 minutes. Reduce heat to 350F and bake additional 50 minutes, or until a knife in centre of pie comes out clean.
Allow pie to cool, then refrigerate until cold. Serve as is, or with dollops of fresh whipped cream.
Serves 6-8.
